Our Story

A Bakery Born From
Stubborn Quality

Ghouls and Grinds started with a simple frustration: Hanover deserved better. Not fancier — better. Real butter, not margarine. Real coffee beans, not instant. Real time spent on things that can't be rushed.

We opened our doors on 3rd Street with a deck oven, a commercial grinder, and an unreasonable standard for what "good enough" actually means. Six years later, we're still folding croissants by hand at dawn, still sourcing single-origin beans, and still turning down shortcuts because the alternative tastes like compromise.

The "Ghouls" part? We love this town's history — all the hauntings, the legends, the stories that make Hanover feel like a place with depth. The "Grinds" is the daily work: the early mornings, the calloused hands, the quiet pride in a well-made bun.

Behind the Counter

Source Everything

We work with three local farms for dairy and eggs, a roaster in Lancaster for our coffee, and a mill in Maryland for our flour. If we can't name the supplier, we don't buy it.

Mix & Ferment

Doughs are mixed the night before and cold-fermented. That's 18 to 72 hours of slow development — the difference between bread that's okay and bread that stops traffic.

Bake & Pull

Our deck oven runs from 5 AM until the last loaf comes out. We pull batches throughout the morning so you're never getting yesterday's bread.

Serve With Pride

Every item is presented with the understanding that someone spent hours making it. We'll tell you how it was made. We want you to know what you're eating.

We bake in waves throughout the morning. The best time to visit is between 7 and 9 AM on a weekday — everything's hot, the line is short, and we actually have time to chat about what we're making that day.
